Granola Coconut Apple Sauce Trail Mix Cookies

2 sticks Butter, softened
1/2 cup Brown Sugar
1 cup Apple Sauce
1 Eggs
1 tsp Baking Soda, dissolved in 2 tablespoon of warm water
1 tsp Vanilla
1 cup Bob’s Red Mill Whole Wheat Flour
2 tablespoon Cinnamon
1 tsp Ginger
2 1/2 cups Bob’s Red Mill Crunchy Coconut Granola
3/4 cup Chopped Pecans

Preheat oven to 350°F.

In a bowl, cream the butter with the sugars. Beat in the egg, baking soda mixture, and vanilla. Blend the flour, cinnamon and ginger and stir into the wet stuff. Chop and add the pecans. Drop rounded teaspoons of the dough about an inch apart onto a greased cookie sheet. With a fork flatten and spread each mound into a round (about 3″ in diameter). Bake cookies for 10 minutes or until golden brown.

Makes about 45 cookies.
